Il Salto dell’Acciuga è una manifestazione culturale ed enogastronomica che si svolge ogni anno a Laigueglia, uno dei borghi più belli della Liguria. L’evento celebra la tradizione marinara del paese, in particolare la pesca e la lavorazione delle acciughe, alimento simbolo della dieta mediterranea. Il nome richiama l’antico salto compiuto dalle acciughe nei pressi della costa, segnale per i pescatori locali. Durante il festival si tengono degustazioni, spettacoli, mercatini artigianali e incontri culturali. Non mancano le ricette tipiche a base di acciughe, preparate dai ristoratori del luogo.
